This syrup starts with a diced Honeycrisp apple and apple juice. A gentle simmer brings them together with maple syrup, cinnamon and cloves; vanilla goes in after the pan comes off the heat. Strain it, chill it, and keep a small batch ready for your next coffee.
What you’ll need
A small saucepan, a fine-mesh sieve, and a clean, covered container for storing the finished syrup.
- 1 Honeycrisp apple, cored and diced to 5–6 mm
- 300 ml apple juice
- 2 tbsp maple syrup
- 2 cinnamon sticks
- 3 whole cloves
- Pinch of salt
- 1 tsp vanilla extract
Make the syrup
Add the apple, apple juice, maple syrup, cinnamon sticks, cloves and salt to a small saucepan.
Simmer gently, uncovered, until the apple is soft and the liquid has reduced by roughly half. Stir occasionally.
Strain through a fine-mesh sieve to remove the apple and spices.
Let cool slightly, then stir in the vanilla extract.


Follow the pan, not a timer. The recipe uses softness and reduction as its cues. Pan size and heat affect how quickly you get there, so stir occasionally and keep the simmer gentle.
A little apple pie in your cup
Try the syrup in a cortado or latte for an apple-and-spice twist. Start with a small amount, stir it into the coffee, and adjust to your taste before adding milk.
